Nutella chocolate mousse… for my mother on her birthday

I made this quick chocolate mousse to celebrate my mom’s birthday last week. Of course, she didn’t get to eat it, she just saw the pic, and we ate in celebration. Cheers to you mummy!

Nutella Mousse:
(makes 2 servings)

Nutella – 1 cup
Whipping cream (3/4 cup)
2 eggs, separated
1.5 sticks butter
Crackers/Marie biscuits

(added sugar, if needed)

Microwave Nutella and 1 stick butter for 40 seconds (on low power). Add powdered sugar if needed.

Add 1 egg yolk, and mix well.

Whip the cream till peaks form. keep aside.

Beat the egg whites until stiff and incorporate into the mixture, folding slowly.

Add the cream and mix gently.

Crush the crackers in a grinder/food processor until coarsely ground. Mix with 1/2 stick of butter, with your fingers until crumbly.

Assembly:

In a wide wine glass, press the coarse biscuit layer in place, tapping firmly.

Over this, pour the mousse mixture.

You can add a garnish, such as crushed choco chip cookies (like I did) or chocolate shavings.

Let it refrigerate for 3-4 hours, best overnight.
