Delia Smith’s Basic Pancake Recipe
110 g plain flour (maida)
a pinch of salt
2 large eggs
200 ml milk mixed with 75 ml water
2 tablespoons melted butter
(a little extra butter for cooking the pancakes)
Sieve the flour ad salt into a large mixing bowl. Make a well at the center of the flour and break the eggs into this. Whisk the eggs with a balloon whisk incorporating all bits of flour into the mixture.
Start to add small quantities of milk+water slowly and continue whisking till no lumps are visible. Use a spatula to gather all the batter from the edges and whisk again till smooth.
When ready to cook the pancakes, add the butter (2 tblsps) to the batter and stir it in.
Heat a non-stick pan and melt a teaspoon of butter on it. Once melted, swirl the butter around so the pan is evenly coated. Tip out any excess butter to a saucer (the pan should be only lightly coated with butter so that the pancakes don’t cook in excess butter). When the pan is hot, turn the heat down to medium and start with a test pancake. Tip a ladle of batter into the pan and as soon as the batter hits the pan, swirl the pan so that the base is evenly coated with batter. The pancake cooks in around 30 – 45 seconds. You can lift the pancake with a flat handled spatula and turn it over for a few seconds.
And then flip it onto a plate and spread your choice of topping , and chomp away.
